Tacos – what could be closer than those to our basic Rotis! Following a re-run of the extra binge-worthy Ugly Delicious, episode 2. Tacos for breakfast seemed like the next obvious thing. Tacos, Burritos, Enchiladas and Quesadillas basically originate from the same base product – the tortilla. The flavours and use of tomatoes is Mexican cuisine, however, is much closer to what we Indians are used to.
This is nowhere like an authentic Taco, but something I whipped up for breakfast with the ingredients at hand. I think I will have a full-fledged DIY taco party soon! Interested in breakfast for one? Bet you would love this.
Ingredients for the Tortilla
- All-purpose flour – 1 cup
- Whole wheat flour – 1 cup
- Water
- Salt – to taste
Method
- Sift the flour on a pastry board. Mix both all-purpose and whole wheat flour. Add a pinch of salt and mix.
- Slowly add water in the water and bring together. Knead the dough and let it stay for 10 minutes.
- To make the tortilla, take a small ball of the dough. Use a rolling pin to spread it, approximately 4inches in diameter. Use extra flour if necessary to avoid sticking. Since I am a novice with the rolling pin, I used a plate to cut the taco into a perfect round. And mixed the remaining bits back to the dough.
- Heat a Tawa and carefully place the rolled tortilla on it. Cook on both sides.
- Make all the tacos.
Ingredients for the Taco Filling
- Red bell pepper – 60 g (approximately half a pepper)
- Yellow bell pepper – 60 g (approximately half a pepper)
- Onion – 1, medium-sized, sliced
- Olive oil – 1 tbsp
- Smoked pork salami – 4-5 piece
- Chicken salami – 4-5 pieces
- Cheddar cheese – 1/4 cup, finely grated
- Chipotle mayonnaise – 2-3 tbsp
- Orange marmalade – 2-3 tbsp
- Fresh Coriander leaves – to garnish
- Lemon wedges – 2 to 3
Method
- In a pan, heat olive oil, add the onion and cook till translucent.
- Slice the bell pepper and add to the pan. Cook till the mixture starts to caramelize on the sides. Set aside.
- Smear some chipotle mayo on the tacos. Place salamis on the taco, add some of the bell pepper and onion mix. Add a bit of the orange marmalade.
- Top with grated cheese and coriander leaves.
- A squeeze of lemon before you gobble it up.
Feel free to shake up the toppings or add your own!
