Best are the meals that pull themselves together quickly. And are super gratifying. Orange marmalade chicken is a classic 30-minute meal, teamed with a hearty bowl of broccoli. It is funny how all American TV shows, showed kids hating on broccoli and Brussel sprouts. I have loved them for as long as I can remember. Possibly because they were and still are considered exotic.
Orange Marmalade Chicken is a quick recipe with a zing of freshness. Slightly sweet and sticky, I paired my chicken meal with broccoli topped with fried garlic. Interested in another quick chicken meal, check out here.
Ingredients for one
- Boneless chicken – 200g (I tried Licious and quite liked it)
- Soy sauce – 2 tbsp
- Ginger paste – 1/2 tsp
- Salt – to taste
- Honey – 1 tbsp
- Orange Marlamade – 3 tbsp
- Olive oil – 2 tbsp
- Garlic – 4 cloves, chopped
- Broccoli – 1 medium-sized
Method for Orange marmalade chicken
- Wash and pat dry the chicken.
- Marinate the chicken for 10 minutes with garlic, a pinch of salt and 1 tbsp soy sauce.
- Meanwhile, chop the broccoli into florets. Microwave on high for 1 minute.
- Heat 1 tablespoon olive oil in a pan and fry the garlic until fragrant. Add the cooked broccoli and cook for 3-4 minutes. Mix well and set aside.
- Heat the remaining oil and grease the pan. Add the marinated chicken, cover and cook for 4-5 minutes on medium heat.
- Flip the chicken on the other side, cook for another 2-3 minutes.
- Add 1 cup of water, remaining soy sauce, honey, salt and 2 tablespoon orange marmalade, mix well. Cook till the sauces reduce and caramelize. Cooking in water will also help the chicken to be tender and juicy.
- Smear 1 tablespoon of orange marmalade on the serving plate and serve with the chicken and garlic broccoli.
