One pot pasta with taco mix and pepper

One pot pasta has always intrigued me, Pinterest happens to be full of inspirations of the lazy pasta pot dishes. I never quite understood how it would work, but a recent experiment turned out pretty great. So, I decided to record the second one and mixed in my love for Mexican with pasta. Check out attempt number one below –

Cooking pasta with the sauce improves the texture and consistency both. Also, you literally just have one thing to wash. (Quarantine woes are real) Brace yourself to be surprised with this one pot pasta wonder. Find more Mexican favorites here & everything pasta here.

Ingredients for One Pot Pasta (serves 2)

  • Your choice of short pasta – 2 cups (I used fusilli, but you can use penne, small shells (tofe), farfalle or elbow)
  • Garlic cloves – 5 to 6, small, finely chopped
  • Extra virgin olive oil – 2 tbsp
  • Onion – 1, medium-sized, sliced
  • Sweet corn kernels – 1/4 cup
  • Chicken sausages – 1/4 cup, chopped (optional)
  • Bell pepper, sliced – 1/2 cup (Mix of yellow, red, and green)
  • Roasted cumin powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Red chili powder – 1/2 tsp
  • Smoked paprika powder – 1/2 tsp
  • Dried herbs – 1 tsp
  • Chunky tomato sauce – 2 tbsp
  • Shredded Cheddar cheese – 2 tbsp + more to garnish
  • Salt – to taste

Method

  • Heat olive oil in a pan, add the chopped garlic and cook on medium heat until fragrant, about 3-4 minutes.
  • Add the sliced onions to the pan and cook for another 2-3 minutes until the onions turn pink.
  • Now add the sausages, corn and bell pepper one at a time, sauteeing on medium heat for 2 minutes each.
  • In a bowl, mix the cumin powder, coriander powder, herbs, red chili powder and paprika. This essentially becomes for taco mix. But you can also use a pre-mix if you prefer. Add this to the cooking vegetables and mix well.
  • Add the pasta and the sauce to the pan and toss well.
  • Cover with water, mix well and bring to a boil. Cover and cook on medium-low heat for 7-8 minutes.
  • Mix the boiling pasta and add the cheese and salt. Cover and cook for another 5 minutes, or until your pasta is cooked and has come together. The only drawback to one pot pasta dishes is that they take longer than usual to cook, but believe you me, the texture is worth the wait.

Sprinkle with some more herbs and cheese and chomp away!

Materials

  • 2 cups Pasta any short pasta type of your choice
