The first thing that pops in your head when Maharashtrian cuisine is mentioned is the OG Vada Pav & Chaupati Pav Bhaji. Labelling just that as Maharashtrian cuisine, would be labelling Idli and Dosa as South Indian food. Truth be told, Maharashtrian cuisine is very extensive. I have Malwani food once when I was in Pune. And the simplicity of flavours and similar ingredients made it such an excellent meal! Read the story here.
Bringing the diversity to Delhi, WelcomHotel Dwarka has put out a stunning spread! They had flown in a Chef from Aurangabad, to create local favourites like Zunka, Puran Poli, Koliwada prawns and more!
Maharashtrian Thali
The Chefs prepared a special Thali for us, complete with Puran Poli, assorted papad, multigrain roti, peanut chutney and green chilli techa. Although, the spread is available on buffet and this was a special wholesome prep by the Chefs. The thali was heavy on meats and well balanced with freshness, a light dal and rice. Zunka is a slightly dry version of the famous Pithla. Easy reference – Pithla Bhakri, Little Things. I absolutely loved the combination of the thick Zunka and Puran Poli. Special mention, the crunchy methi with garlic, tomatoes and onions. Lightly tossed and adding the perfect green zing.
Coming to all the meats, everything was spot on. Koliwada prawns, coated with chilli, crunchy fried and not losing the essence of the light meat. Masala Komdi, boneless chicken tossed with curry leaves and mustard seeds. Black masala fish was light and yet flavourful. But the star has to be Kolhapuri mutton. Kolhapuri Mutton is set apart by Poppy seeds, sesame seeds, red chillies in the recipe. Tender mutton, well ground and cooked together to a lip-smacking consistency.
