I never forget Ryan and Esposito’s dialogue from Castle,
Pancakes, is just not breakfast!
While the context was entirely different, pancakes truly cannot be categorized into just breakfast, and waffles are even more special. Come winter and my chef’s hat comes out along with my huge appetite. These cinnamon pancakes are super easy to make and bring out the holiday cheer perfectly.
Ingredients
- Flour – 1 cup
- Powdered sugar – 2 tbsp
- Salt – 1/4 tsp
- Cinnamon – 1 tsp
- Baking powder – 1/2 tbsp
- Milk – 1 cup
- Apple cider vinegar – 2 tsp
- Vanilla essence – 2 tsp
- Oil – 1 tbsp + to cook
- Honey, cinnamon and oranges for garnishing
Method
- Add the apple cider vinegar in milk to create buttermilk and let stand for 2-3 minutes
- Sift the flour in a bowl, add sugar, salt, cinnamon powder, and baking powder and mix well
- To the milk mixture, add the oil and vanilla essence and mix well
- Combine the wet and dry ingredients together and whisk till a smooth batter is formed
- Let it rest for 10 minutes to settle
- Heat some oil in a pan and pour one spoonful of mixture, cover and let it cook on low flame for about a minute. Cook on both sides and put aside
- Stack the pancakes, dust with some powdered sugar, cinnamon powder, honey, figs, and orange slices
