No points for guessing that I am a sucker for breakfasts and brunches and I am on a constant hunt to cook new and exciting things. since, I haven’t gotten around to actually creating and curating a lot of recipes, I adapt them to my liking. This one is a Sweet Omelette/ Breadless French Toast. Originally a Russian recipe of a sweet omelette, I like to think of this as a cross between pancake and a French Toast.



Ingredients for One
- Eggs – 2
- Milk – 1/3rd cup
- Sugar – 1 tbsp
- Flour – 1 tbsp
- Vanilla essence – 1 tsp
- Olive Oil – 1/2 tsp
Method
- Break the eggs in a bowl, add milk and whisk well
- Add the sugar, flour and vanilla essence and whisk until fluffy
- Heat oil in a non-stick pan
- Add the batter and spread around the pan. Cover and cook on a medium flame for 5 minutes
- Check if the bottom is cooked, then toss and cook on the side
- Serve the light breadless omelette with honey and fresh fruits
