I think it is pretty evident that I am constantly looking for new ways to cook eggs. Recently Nando’s India sent me a hamper of their classic Peri Peri sauces – Medium, Hot and XX Hot. And I couldn’t wait to start cooking with these.
So naturally, my first experiment was – Peri Peri egg bhurji. Follow this simple recipe for a power packed brekky.
Ingredients
- Eggs – 2
- Onion – 1 medium
- Tomato – 1 medium
- Bell pepper (any color) – 1
- Garlic cloves – 3 to 4
- Turmeric – 1/2 tsp
- Red chilly powder – 1/2 tsp
- Nando’s Medium hot sauce – 2 tbsp
- Salt – to taste
- Butter – 1 tsp
Method
- Crack the eggs in a bowl, add turmeric, chilly powder and salt and beat till frothy
- Roughly chop the onion, tomato, garlic, and capsicum
- Heat a pan and melt the butter, spread over the pan until well coated
- Add the onions and garlic and cook till transparent
- Add the capsicum, cook for 3 to 4 minutes
- Add the tomatoes and cook for another 2 minutes. Add the Peri Peri sauce and mix well
- Add the egg mixture and whisk till the eggs come together and cook
- Top with some more Peri Peri sauce and serve with crisp toast
