Breakfast enchiladas came to me as I realized I wouldn’t be able to roll my whole wheat bread as well. I really wanted to make French toast + sausage roll-ups, but technicalities had me improvising. And I was so glad of it by the end of it.
I was always big on eggs for breakfast. And I experimented a lot. A LOT. But like everything else, the obsession wore off and I stuck to my foolproof recipe of scrambled eggs. It’s all about dosas, uttapams, chillas, and the one-off experiments like these. The recipe is actually pretty easy – breakfast sausages, eggs, bacon, rolled like enchiladas and baked to a crisp make for a hearty breakfast.

Ingredients for Breakfast Enchiladas – for 3 roll-ups, serves 1
- Bread slices – 3
- Sausages – 3 links (You can choose any sausages, I used chicken breakfast sausages)
- Egg – 1
- Milk – 1 tbsp
- Sugar – 1/2 tsp
- Bacon jam/ Bacon cubes – 3 tbsp
- Butter – 3 tbsp, melted
- Maple syrup/ honey – to pour
Method
If you are using bacon cubes, cook the bacon and chop it slightly, so that it is easier to spread.
- Whisk the egg with milk and sugar and set aside.
- Roll out the bread so that it becomes slightly thinner and becomes easier to roll.
- Spread the bacon jam or sprinkle the bacon cubes.
- Take one sausage, place it on the edge of the bread slice. Roll as tightly as you can without breaking the bread.
- Repeat with the other 2 slices.
- Line a dish with butter. Place the 3 roll-ups side by side, like enchiladas. Pour the whisked egg mixture over it.
- Bake in a pre-heated oven at 180 degrees for 12 to 15 minutes.
- Once crispy and done, pour generously with maple syrup or honey and enjoy!
