Not often do you come across a delivery brand that sweeps you off your feet. Biryani Central does that, and more. Biryani, however much politicized it might be in today’s times, nothing beats a good pot made on “dum”. I myself have had so many amazing experiences with biryani. From an all South Indian spread to cooking Kathal ki Biryani. But I don’t recall the last time I was left speechless by a home delivery.
Biryani Central packages “Dastarkhwan” in a stunning distressed white tray. Kudos to their packaging which has zero single use plastic. Dastarkhwan traditionally means the cloth upon which the food is served. But, it also often refers to a feast.
In Biryani Central’s Dastarkhwan
Awadhi Gosht Biryani – served in a proper Handi. Light whiffs of saffron and kewra water, perfect grain of rice and lightly flavoured mutton, cooked in its own juices. Mutton Nehari – a fine, rich lamb shank gravy, slow cooked so none of the flavours go amiss. Mostly devoured with a Sheermal, but also tried a rather different bread this time called Taftan. A soft puff pastry like bread topped with Kalonji seeds. Dal Bukhari – the rich and creamy all time favourite dal makhni, shines through even with the Nihari taking most of the limelight. Galauti Kebab – the satin soft melt in your mouth kebabs were absolutely perfectly balanced. But what was most astonishing were the accompaniments. A super spicy mint chutney, a sweet papaya relish and Burrani raita with chunky garlic.
Finished off the meal with Malai Phirnee. A thick rice pudding, super creamy topped with pistachios and silver Varq. The meal is rich but not overtly heavy on the gut. A quality rare when it comes to the cuisine. Biryani Central aims at perfecting the art of “dum” or slow cooking. And they are acing it brilliantly.
