Crack Noodles are called so for a reason! You get too addicted to them. And the best part is that they are super easy to cook. No complicated ingredients or techniques, and yields amazing results. I used rice pad thai noodles as I had some left at home – but you can swap for any other kind available to you. Check out the Pad Thai noodles I made a while back here.
Ingredients for Crack Noodles – serves 4
- Pad Thai Noodles – 1/3rd packet or about 160g
- Spring onions – 2 stems about 100g
- Red onion – 1 large
- Garlic cloves – 4, minced
- Ginger – 1/2 inch, minced
- Soy sauce – 3 tbsp
- Brown sugar – 1 tbsp
- Chilli sauce – 2 tbsp, mine was super hot since I used Bira Hot sauce, which is REALLY hot. Use more, if required.
- Honey – 2 tbsp
- Olive oil – 1 tbsp
Method
- Boil water in a large pot. Lower the heat and add the noodles. Let the noodles cook for 5 minutes. Rice pad Thai cook very easily, strain when the noodles are completely opaque. And put in a cold water bath to avoid sticking.
- Wash the spring onions and chop both the greens and white onion bulbs.
- Peel and slice the red onion.
- Heat oil in a pan, add the sliced red onions, cook until crispy and set aside.
- Add the ginger-garlic mince, and chopped white onion, cook until the onion becomes transparent.
- Mix in the greens, reserving a few to garnish.
- In a small bowl mix soy and chilly sauce, and brown sugar together and add to the pan. Mix well.
- Add the noodles and using tongs mix well so that they are well coated.
- Add honey, and cook for 2 minutes.
Your sweet & spicy crack noodles are ready to be devoured.
