Belgian Waffles topped with apples and cinnamon

I have always personally favoured waffles over pancakes. Or so I thought until I actually made them myself. Turns out the waffles that I so loved eating in restaurants, is a cumbersome nut to crack. But I was determined, and after a public help plea for a waffle iron (here) there was no stopping me. It took me about 1.5 hours to finish the whole thing, so in case you want something quicker, I suggest you check out these amazing vegan pancakes!

Ingredients – makes 6 waffles (as shown above)

  • Eggs – 2
  • All-purpose flour – 1-3/4 cups
  • Powdered sugar – 1/4 cup
  • Salt – 1/2 tsp
  • Baking powder – 3 tsp
  • Cinnamon powder 1 tsp
  • Oil – 1/2 cup
  • Vanilla essence – 1 tbsp
  • Milk – 2 cups
  • Honey – to top
  • Muesli or rolled oats – to garnish

For the apple cinnamon topping

  • Apple – 1
  • Brown sugar – 2 tsp
  • Cinnamon powder – 2 tbsp
  • Extra virgin Coconut oil – 1tbsp

Method

  • Start off by making the apple-cinnamon topping. Wash the apple properly and chop into small pieces. In a pan, add coconut oil, chopped apples, cinnamon powder and brown sugar. Cook on low heat, stirring from time to time until the mixture caramelizes. Splash some water if required. It will take approximately 10 minutes for the apples to cook and not be mushy. Set aside.
  • For the waffle batter – separate the egg whites and yolks in two different bowls. Preferably large ones, since they need to be mixed. I separate the egg whites by poking a small hole in the egg using a paring knife and letting all the whites out. And cracking the yolk to a separate bowl.
  • Start working on the yolk first. (see footnote why)
  • Whisk the egg yolks. And add all other liquid items, oil, milk and vanilla one at a time, in that sequence and whisk all the ingredients well.
  • In another bowl, sift the flour, salt, sugar, baking powder and cinnamon powder.
  • Add the dry ingredients to the wet ones slowly and keep whisking it together into a smooth mixture.
  • Using a hand blender, with the whisking extension, whisk the egg whites until they form soft peaks. Add the egg whites to the mixture and fold together.
  • Heat the waffle iron for 5 minutes. Brush with a little bit of coconut oil. Put 2 ladles of the batter on each section (since mine had two). Tip lightly so the whole surface is covered. Close and cook for 8-10 minutes.
  • You will see the crisp brown when done. Repeat for the others.

Garnishing

  • Plate 2 waffles each on a plate. Pour some of the apple-cinnamon mixture on top.
  • Drizzle with lots of honey and sprinkle some oats.

Whisking the egg whites before and letting them sit will result in loss of the air trapped, and you will eventually have to whisk again.

All the waffle irons function differently, it would be better if you batch one waffle and see how much time it would take and how much batter is required.

You can switch and experiment with the toppings of your choice.
