Baked chicken with dates, lemon, and EVOO.
I think the Holiday spirit has engulfed me more than ever before in 2020. Maybe it’s all the gloom and dreariness of this year, but I am already all about warm baked, skillet chicken and hot chocolate. And Holiday recipes are kind of cumbersome, with the whole gravy, mash, veggies spread. But they really don’t have to be.
This is a one pot supremely simple recipe, the chicken takes all the flavours from the marinade and cooks in its own juices. The addition of dates adds that wintery, warm touch and makes it yet so simple to eat.

Ingredients for Baked chicken with dates (serves 4-5)
- Chicken – 1 kg (with bone)
- Onion – 3/4 cup, sliced
- Garlic – 1 tbsp, minced
- Dates – 10, divided
- Bay leaves – 2
- Lemon Juice – 2 tbsp
- Extra Virgin Olive Oil – 4 tbsp
- Honey – 2 tbsp
- Coriander powder – 1 tsp
- Oregano – 1 tsp
- Black pepper – 1 tsp
- Salt – to taste
Method
- Wash and pat dry the chicken. Make a few cuts on the chicken pieces so that the marinade can be absorbed easily into the chicken.
- Deseed and divide the dates into 4 and 6. Chop up 4 of the dates into small pieces and halve the other 6. Keep the halved dates aside.
- In an ovenproof dish, add the chicken, sliced onions, garlic, chopped dates, bay leaves, lemon juice, olive oil, coriander powder, oregano, black pepper, and salt.
- Use your hands to rub the marinade into the chicken well. Cover with cling film and set aside for at least an hour. Or even overnight (like me!)
- Sprinkle the set aside halved dates on the chicken and bake in a pre-heated oven at 180 degrees for about 40 minutes.
- Garnish with fresh coriander and enjoy with dinner rolls or mashed potatoes and veggies!
