Baked Chicken Legs with brown sugar

Baked chicken legs, brown sugar, paprika, ginger, and garlic, and the perfect one-pot baked meal. Great for a week-night dinner with mash and veggies or rice but even better with drinks on a Fri-yay! These chicken legs are also perfect for hosting – a messier affair than chicken breast but just perfect for midnight bingeing and hey, healthy too!

However easy and basic cooking chicken might seem, it is extremely easy to mess things up and end up with rubbery, dry chicken. Since chicken is a lean meat, it is best to not overcook the chicken. Ingredients for Baked Chicken Legs

  • Chicken legs – 500g
  • Brown sugar – 2 tbsp
  • Ginger mince – 1 tsp
  • Garlic mince – 1 tsp
  • Salt – 3/4 tsp
  • Smoked paprika – 1 tsp
  • Olive oil – 1/3 cup
  • Black pepper – 1/2 tsp
  • All spice – 1/2 tsp
  • Honey to drizzle (optional)

Method

  • Wash the chicken legs thoroughly and add slits.
  • In a bowl, mix the brown sugar, minced garlic and ginger, salt, paprika, all spice, pepper and olive oil. Whisk well.
  • In a baking dish, place all the slit chicken legs. Lather them with the marinade and set aside for 30 minutes.
  • Drizzle some honey to add some extra char!
  • Bake for 30 minutes in a pre-heated oven at 190 degree celcius.
  • Scoop out with some mashed potatoes and grilled veggies or enjoy as is with some chilled drinks!

This one also makes for a wonderful healthy dinner option. Use boneless chicken wings or chicken breast instead of legs. Just toss with some butter lettuce and veggies of your choice. The marinade works as the perfect salad marinade to bring it all together.
