#CookandChomp Sweet Omelette

No points for guessing that I am a sucker for breakfasts and brunches and I am on a constant hunt to cook new and exciting things. since, I haven’t gotten around to actually creating and curating a lot of recipes, I adapt them to my liking. This one is a Sweet Omelette/ Breadless French Toast. Originally a Russian recipe of a sweet omelette, I like to think of this as a cross between pancake and a French Toast.

Ingredients for One

  • Eggs – 2
  • Milk – 1/3rd cup
  • Sugar – 1 tbsp
  • Flour – 1 tbsp
  • Vanilla essence – 1 tsp
  • Olive Oil – 1/2 tsp

Method

  • Break the eggs in a bowl, add milk and whisk well
  • Add the sugar, flour and vanilla essence and whisk until fluffy
  • Heat oil in a non-stick pan
  • Add the batter and spread around the pan. Cover and cook on a medium flame for 5 minutes
  • Check if the bottom is cooked, then toss and cook on the side
  • Serve the light breadless omelette with honey and fresh fruits
