My all time lunch favourite – Tahiri

Lunch at home on Sundays often ends up a quite affair after a hearty breakfastย and one of my favourite things are pulavs and light biryanis. My go to dish is tahiri, it is delicious and super quick to make. But my granny makes it the BEST. It is the right mix of flavors, you can customize it with as many veggies as you want and alter the masalas as per your taste.

Tahiri – ready to be served

Ingredients

For four people

  • Rice – 1-1/2 cup, soaked for one hour
  • Bay leaves – 2 pieces
  • Green cardamom – 2 pieces
  • Black cardamom – 1 piece
  • Cloves – 4 pieces
  • Black peppercorns – 6 pieces
  • Green Peas – 1/2 cup
  • Nutri nugget chunks – 1/2 cup (soaked and cut into half)
  • Carrot – 1 small
  • Onions – 1 large, julienne
  • Ginger – 1 inch piece, chopped
  • Ghee – 2 tbsp
  • Turmeric – 2 tsp
  • Red chilly powder – 1 tsp
  • Garam masala – 1 tsp
  • Salt- to taste

Method

  • Soak the rice in water for about an hour and strain
  • Heat ghee in a thick bottom pan, add whole masalas. Let them crackle for a minute
  • Add the onions, saute till pink
  • Add ginger, saute forย  minute
  • Add turmeric, red chilly powder, garam masala and salt, stir for a minute and sprinkle some water
  • Add the chopped vegetables and sautee for a minute
  • Add the rice and mix well with the ingredients. Stir constantly for 3 minutes
  • Cover with 2-1/2 cups of water, mix well and pressure cook for 1 whistle
  • Serve hot with yogurt
