#SundayScenes – Rolling out a pizza

My Sunday was a super lazy one with catching up on some blog posts, sleep and a lot of doing nothing. The evening however got rather exciting after deciding to cook pizza for dinner from scratch. It is super easy to do once you have the right kind of yeast. The recipe I followed was super simple and by the end of it you can totally try rolling out some pies on your own.
For the dough
Makes around four 7″ pizzas

  • 4 cups of all purpose flour
  • 1 sachet yeast
  • 1-1/2 tsp salt
  • 1 tsp sugar
  • 2 tbsp oil
  • 1-1/2 cups warm water

Combine the flour, yeast, salt and sugar in a food processor. Mix it up. Add the oil and mix. Add the water in small amounts and churn until you get a soft dough – neither too dry nor sticky.
Wrap in a damp muslin and let it stay and rise.
For the sauce
Chop up two tomatoes and 8-10 garlic cloves and churn to a paste in the grinder. Simmer and cook for 5 minutes and add to the regular tomato sauce to give it a fresh punch.
For the pie – Gather all the household ingredients you can find – onions, capsicum, tomatoes, sweetcorn, cottage cheese and we also added some homegrown aubergines. Chop and whip.

To start with the pizza, make sure the dough has doubled, literally and is super soft. Break a batch and roll, either with the rolling pin or hand stretch it – add the sauce, veggies and cheese and set to a pre-set oven.

My hand stretched pie rose beautifully and the rolled one formed a palatable thin crust – and baking this was SO much fun.
